We survived Nikki & Henry's wedding weekend! The groom's dinner that we catered on Friday night went off without a hitch. We were thankful to have Mike's parents in town to help us out. We served about 100 people and heard no complaints. We had numerous people come back in line for second & third helpings so we're pretty confident the food was tasty. Here are some more "before" pics:
You are seeing 4 pounds of butter, 12 cans of sweetened condensed milk, 4 boxes of graham crackers, 10 pounds of red onions, 8 green peppers, 5 red peppers, a ton of ginger, & 10 bunches of cilantro.
I've never seen so much ginger in my life:
On to the fridge... that's 10 pounds of carrots and an entire Target bag full of green onions.

In the midst of packing everything up, I neglected to grab my camera and so I don't have a single picture of the final product!! Super bummed.
We did however remember the camera for the wedding on Saturday night. We just got a few shots. Here is the wedding party:

It was a great weekend. Everything went smoothly and I managed to sneak a 3 hour nap in on Sunday. woo hoo! We have another wedding this weekend for my friend Darla and then school starts! Cheers to my last Fall Semester of classes!
