zero waste

Gosh, February is flying by. We've had a pretty low key weekend. I think I am coming down with a cold as I've had a splitting headache all day and I'm all stuffed up. The week wrapped up with a pretty good Friday. I did cardio kickboxing at 11am. I love the Thurs-Fri combo of athletic circuit and cardio kickboxing. They are both really tough classes and it feels good to head into the weekend all toned up.
For breakfast on Friday I had oatmeal made with almond milk, a scoop of peanut butter and a banana:

For lunch I had more of Mikey's potato leek soup.
My mid-afternoon snack was a banana & a granola bar.
Dinner was a veggie sandwich made with hummus, cheddar cheese, cucs, red peppers, red onion, tomato and lettuce:
I also made a green monster (spinach, almond milk, p.b. and a frozen banana):
Suffice it to say that I got my daily dose of potassium due to the 3 bananas I consumed in one day. gah!
Since it was Friday, I broke in to one of these:

Do you notice the clarity of the last two pics? I happened upon the macro setting on my camera and it works great!
This morning (Sat) we slept in a bit and then Mikey headed to work. For breakfast I used up the last bit of spinach and almond milk to make another monster :
Per usual, Mikey worked longer than he hoped to so I had lunch on my own. I made an open faced sandwich to use up our bread and veggies. I also had potato leek soup.
The cold medicine and tylenol I took to get rid of my headache did nothing, so I laid down for a nap. A couple hours later I woke up feeling a little better.
Mikey and I ran some errands and then he made Thai Soba Noodles with Roasted Chicken:
Meanwhile, I made Chocolate Zucchini muffins/cupcakes:
It was a day of using up a bunch of food in our fridge & freezer.
Now we're chilling on the couch watching a movie and enjoying a couple Bells Two Hearted beers. Total relaxation!

  1. Did you notice your Sat. lunch sandwich looks like a smiley face? (You kind of have to look at it sideways.)
