springtime

This will be a quick update since I need to head off to class shortly.
Thursday's dinner was certainly worth the wait! Pork Tamale Pie:

Another wine that we loved from the tasting was this Tikal from Argentina:
It went well with the Tamale Pie.
Friday breakfast was banana oats:
Lunch was corn chowda:
I can't remember what I had for dinner on Friday night but Mikey worked so I'm sure it was nothing exciting. I do remember working on school work until 10 and then going to bed. Such an exciting life I have, huh?
As predicted, Mike got called in to work Saturday morning bright and early. So, I made a smoothie for myself for breakfast. I used: greek yogurt, spinach, frozen blueberries & raspberries:

We had a pretty low key Saturday. I took Anna out to the beach. She and Stella romped around while Nikki and I chatted.
Dinner was just leftover tamale pie.
We got to spend Sunday together without any work interruptions. It was gorgeous here! We took advantage of our "seasonal lake view":

Mikey made homemade buttermilk pancakes and bacon for breakfast:
It's been forever since we've made brunch at home. It was nice to whip this up with stuff we had around the house. It was quite delicious and filling!
Sunday evening was spent cooking and baking.
I made a pan of granola bars. These babies have dates & ground flax seed in them. (and a lil' dark chocolate for good measure)
Blech! I hate the lighting in our kitchen for photos! It's hard to get rid of the shadows.
I also made Curry Honey Hummus for the week:
It's the first time I've made this kind and it's a keeper. I've been munching on carrots dipped in hummus all week.
Then, for the grand daddy of all soups... I present.... 16 quarts of black beans & rice:
That's no joke. Mikey hydrated black beans and also added 2 rutabagas to the pot; both gave the soup tons of volume!
We enjoyed the beans & rice with monterrey jack cheese, sliced avocado & sour cream:
So, what have we been eating this week??
Leftover pancakes, oatmeal, leftover corn chowda, and beans & rice... that's it!
It really feels like spring is coming and it feels SO GOOD!!! I can't remember a time when the 1st of March felt like spring in Duluth. I even went out for a run this afternoon in my sweats & long sleeved t-shirt. Bring on the sun!!
