What's back, you ask?? Our awesome internet speed!! Qwest was here this morning and it's no wonder I haven't been able to upload pictures for over a year. The entire outside line from the main pole to our house had to be replaced AND our internet/phone jack was broken inside the house. Sheesh!! It's like getting some life breathed back in to me! Okay that's a bit drastic, but I'm fan-freekin-tastically excited!
We had a 50+ degree day here in Duluth so Anna & I went out for a hike through Chester Park. It was lovely.
Ok, the recap from last week...
I took this out of the freezer:
and cooked it down to this (those are chunks of ginger in there):
Voila! My first effort at making homemade applesauce. It was divine:
Next, I took 4 cups of this:
and reduced it down to 1/4 c. of basically an apple syrup. I needed both the homemade apple sauce and apple syrup to make these:
Butternut Squash Muffins! I used up 3 cups of cooked squash we had in the fridge. They are made with whole wheat pastry flour too. No more white flour in this household! Everything turned out pretty tasty.
Mikey's big culinary adventure of the week was making Beer Can Chicken. He had way too much fun with this (if you can imagine):
Hard to believe he would use a can of his precious Surly Furious for this!
I have one more week of my Ethics class and then 6 more weeks of Accounting before semester break. Yahhhooooo!!
I would say, yes - WAY too much fun. I can hear the giggling from here.
