veggie goodness


Yesterday was a low key but productive day. I was feeling congested and had a headache so I stayed home. It was nice to re-charge my batteries. I got a bunch of house stuff done: laundry, summer clothes moved to the attic, halloween costumes put away, shoes posted on eBay, blog experiment started...
For dinner Mikey THE BEST veggie sandwich I have ever had. We got some deli mustard which has horseradish in it and it added a nice element to the sandwich.
I also had a healthy portion of these:
Mikey has turned me in to quite the kettle chip lover! I never used to eat chips!

About an hour later I decided to enjoy a glass (or two) of some Zin:
I sipped on my wine while I made this:
Homemade Peanut Butter Granola Bars
They turned out great! I'd like to experiment with this recipe from Giada to see if it works to replace some of the butter with something healthier.

Today was back to the normal routine. I made coffee and was off to work.
I had a big breakfast to fuel my workout:

At 11:00 Nikki and I hit the treadmills:
I did 40 minutes of jogging and fast walking on a 4% incline. I was a sweaty mess at the end.
For lunch, I had more of the leftover squash pasta. I ate half before remembering to take a picture. It's hard work:)
By 6:00 I was ravenous so Mikey whipped up another veggie sandwich for me. Enjoyed with a glass of 7UP.

Instead of chips with our sammies, we had canned lobster bisque made with 1/2 & 1/2:
I'm now sufficiently stuffed and enjoying a Summit IPA while my poor husband sips on tea and veggie broth. He's having some abdominal issues. Sure hope he feels better soon so I don't have to drink a beer alone.
